Ah yes. ADHD on parade. Mine wasn’t ramekins, it was queso fresco. Because I *had to make about 30 enchiladas the night before the first of 8 houseguests (yes, 8) arrived for 4 days. Note that pizza delivery was close and quite decent. And I’m sure the guests would have been very happy with that for lunch upon arrival. But no. It *had to be enchiladas. And it wasn’t Christmas Eve but it did involve 3 grocery stores (I needed a lot of a certain brand of cheese), about 30 miles, and 1.5 hrs time total. Add another hour for cleaning the kitchen afterwards. That I had just finished cleaning an hour before the harebrain kicked in. In my defense, I did introduce 3 guests from Israel, New Zealand, and the UK, respectively, to authentic Mexican food. I thought the Kiwi and the Brit were going to duel for the last 2 enchiladas 😁
